What you'll need:
2 large eggs, separated
175g pitted dried dates
150ml maple syrup
1 tablespoon vanilla extract
85g self-rising flour
0% Greek yoghurt, to serve (optional)
1) Preheat the oven to 180c/ Gas 4/ 160c fan oven. Place 175ml of water into a pan and let dates simmer for 5 minutes. Once simmered, tip dates into a food processor with 6 tablespoons of maple syrup and one tablespoon of vanilla extract. Blend until smooth.
2) Transfer the mixture into a bowl and mix with egg yolks, followed by the flour. In a different bowl, whisk the egg whites until stiff, then fold into the date mixture.
3) Place 1 tablespoon maple syrup into each of the 4 200ml pudding moulds and add the mixture. Cover each tightly with foil, stand in an ovenproof dish and pour in hot water to halfway up the sides of the moulds. Cook for 1 hour, until an inserted skewer into the centre comes out clean.
4) Once cooked thoroughly, uncover, and run a knife around the edges of each mould. Invert onto plates and drizzle over Greek yoghurt to serve.
